WELCOME TO STAVIARY

Staviary was built from a love of food, hospitality, and the belief that the best meals should feel both special and deeply personal.

Created by husband-and-wife team Rachel and Eric, Staviary is the culmination of years spent cooking, traveling, gathering, dreaming, and building a life around the table. What began with intimate dinners, private events, pop-ups, and a love for bringing people together has grown into a restaurant of our own in Paso Robles.

Food may be at the heart of Staviary, but beer has its own story here.

Eric’s passion for beer has taken him around the world, exploring different brewing traditions and the cultures surrounding them. He took that passion further by studying brewing at VLB Berlin in Germany, immersing himself in the technique, history, and discipline behind the craft. Over the years, he has developed his own recipes and continued to refine his approach through hands-on experience and brewing.

At Staviary, that journey comes full circle. Our beer program will feature beers Eric has personally created and developed, alongside a thoughtful selection inspired by his travels, training, and appreciation for great beer. It’s a part of Staviary that is distinctly Eric—and one we’re excited to finally share.

At its heart, Staviary is a reflection of how we love to eat and drink. The food is ingredient-driven, thoughtful, and rooted in technique without feeling overly precious. Our menus are shaped by the seasons, the incredible farms and producers of the Central Coast, and a curiosity that allows us to draw inspiration from different places, cultures, and memories.

The experience is just as important as what is on the plate—or in the glass. We wanted to create a restaurant that feels intimate and alive: a place where beautiful food, interesting beer, great wine, music, conversation, and genuine hospitality all belong together.

Staviary is deeply connected to Paso Robles and the people who make this region what it is. Our relationships with local farmers, winemakers, artisans, and our community have shaped us from the beginning, and we’re proud to create something that feels distinctly our own while celebrating where we live.

For us, Staviary is more than a restaurant. It is years of work, risk, creativity, travel, late nights, family, and a shared belief in creating something meaningful together.
